Winemaking is a complex process that involves growing and harvesting grapes, processing grapes, fermenting, storing, and finally bottling the wine. Each of these steps requires special attention and knowledge. Wine storage is an important part of winemaking because during storage, the wine develops and improves. Wine can be stored in barrels, bottles, or other containers.

There are many different types of wine, including red wines, white wines, rosé wines, sparkling wines, and dessert wines. Each type of wine has its own characteristics and requires special care. Winemaking requires experts who have knowledge and experience in wine production and storage, and cellarmen are responsible for all aspects of winemaking, from grape harvesting to bottling.

Dedication and love for wine in Fiolić family has been passed down for three generations. If it weren’t for my father Stjepan, who instilled in me the love for wine, I would still be doing my primary job in accounting today. However, life tells its own stories, and when your brother, wife and the rest of your family get involved, the story cannot turn out or end badly. My love for wine was born right after I returned from college, around 2006, when my father and I started sneaking into the basement of the family home to make wine, first for our family and friends.

My interest in wine grew, so I graduated from winemaking school, and soon after that, I decided that, in addition to my own needs, I could also produce wine for the market. I still share that passion and love for wine and production today as I did then, and my wish is for this love never to become an obligation, but rather a game and adventure that leads me to progress from harvest to harvest and to make wines that will be a reflection of our winery as well as Zadar region.
